Thai Barbeque Ribs


•1.5 lbs. (0.65 kg.) pork ribs, back or side (SERVES 2-3)
•4 Tbsp. oyster sauce (I used Golden Dragon brand)
•2 Tbsp. soy sauce
•1 Tbsp. fish sauce (available in tall bottles at Asian food stores)
•1 Tbsp. black Chinese vinegar (or substitute regular white or apple cider vinegar)
•1 Tbsp. dark soy sauce
•1/4 cup syrup (I used real maple syrup)
•5 cloves garlic, minced
•1 thumb-size piece galangal OR ginger, grated
•Optional: 1 fresh red chili, minced, OR 1/2 tsp. cayenne pepper, OR 1-2 tsp. chili sauce (to taste)
•Garnish: 2 spring onions, finely sliced

Mine game has been running slow to save, which is slowing doing anything on the farm slow doing since yesterday evening, so is my hubby's farm also. Get time outs. Took me twice as long to load my facilities last night. Took me twice as long to harvest my trees and water my hubby's flowers. Thought they was putting in the beginning coding but now not to sure what's going on. Lucky I don't have crops to do today, but need to plant. Guess will have to wait till later and hope it speeds up.

how and how long and temp to cook the ribs??? this sounds fantastic, Grumpa!!! i would also love a recipe for coconut shrimp, if you have!!! we love new recipes at our house, so i'm anxious to try this! these are always a fave when we dine out.

Ok, Grumpa, since Raul is still out there with the aliens, I made research on Thai food, and here it goes:

1. Lots of coconut trees to make coconut milk, coconut vinegar and coconut sugar.
2. Lots of Peanuts
3. Tamarind (this is where the Tamarind trees we've been having for ages come to play)
4. Chilies (lots of chilies)
5. Rice noodles, cellophane noodles, etc
6. Ginger
7. Coriander
8. Soy beans
9. Shallots
10. Acacia leaves
11. Soy Sauce
12. Durion tree
13. Eggplant
14. Mushrooms (all kinds)
15. Bean Sprouts
16. Oyster Sauce (made with the oyster from the fish farm) & several fish sauces from lobsters, etc.
17. Kaffir lime leaves (?)
18. Lots of chicken, fish and different vegetables dishes
20. Fruits: papaya, mango, apples, oranges, strawberries

There you have it, we may have to use them all or we may not if it is an america-nized version of Thai, but those are the things they use the most. So for sure start with those tamarind trees, and plant rice, chilies, ginger, mushrooms, and all the others.

This is the last day of "next week" and no new trees or facilities. Just about every time you say they will be here next week; they are not. Please, we look forward to these updates. Come on.
