when you reload your farm the Dairy will be correct. For some reason it starts the next 8 hours even when you haven't harvested yet. So if you know about what time your dairy needs harvested and it shows 7 some hours or 6 etc, very good chance you can harvest
I have it figured out I think, but if it is confusing for some ,maybe they will fix it.
